What is Amaretto Liqueur?
Amaretto Liqueur is a sweet Italian liqueur with an almond-like flavor. Amaretto pairs amazingly well with chocolate.
In cooking, Amaretto is mostly used in desserts but can also be used in savory dishes. Try it in Homemade Whipped Cream or Vanilla Ice Cream.
Since almond flavors can be slightly bitter, I suggest using semi-sweet chocolate for these truffles instead of bittersweet or dark chocolate. It could make the truffles too bitter.

How to Make Truffles with Amaretto
Step 1. Add the chopped chocolate to a medium-sized heatproof bowl and set aside.
Step 2. In a small saucepan, bring the heavy whipping cream to a simmer- about 10 minutes- and immediately remove from heat.
Step 3. Pour the cream over the chocolate chips and whisk together until all the chocolate is melted.
Step 4. Mix in the Amaretto and vanilla and stir until everything is well combined and the mixture is smooth.
Step 5. Cover with plastic wrap and store in the fridge to cool for about 4 hours.

Tips for Making Homemade Truffles
- Finely chopped chocolate will melt faster. Larger chunks of chocolate will not melt evenly and can cause lumps in your truffles.
- To make the minced almonds, place sliced almonds in the food processor and pulse 10-15 times.
- Roll the truffles in your hands a few times before rolling in the minced almonds or cocoa powder. It will help the topping stick.
- The truffles can also be dipped in chocolate to make chocolate-covered truffles.
