Have you ever made homemade Rice Krispies Treats and thought to yourself, how can I make this better? Is it even possible to improve upon a cult classic?

The answer is YES. Absolutely yes, my friends!

I’ve already done that with my Gluten Free Cake Batter Rice Krispie Treats (😍) but todays recipe for Chocolate Dipped Rice Krispie Treats just might be my favorite of all. I mean, you can never go wrong with a little extra chocolate. 

Unless you’re allergic I guess, but that’s not really the point. The point is that dipping anything in chocolate takes any treat/dessert from a 10 to a 20 (on a scale of 10, of course).

And there’s an unexpected bonus to making chocolate covered Rice Krispie Treats – they last a little bit longer before getting stale!

Chocolate with an upside (other than taste!) is always, always the best kind of bonus. Let’s get down to the details of this delicious dessert.


What You Need To Know About This Chocolate Dipped Rice Krispie Treats Recipe

It’s EASY. I mean easy, easy, easy. So easy, my kids can make these. They just need help with the stirring because don’t we all? It’s your arm workout for the day 💪🏼

Are Rice Krispies Gluten Free?

A question I frequently get is, “Are Rice Krispies gluten free?”. The answer is NO – Kelloggs Rice Krispies cereal is NOT gluten free because it contains barley malt.

What cereal should you use instead? Any gluten free crispy rice cereal you can find – and there are a few brands available. My favorite is One Degree Organic Foods Sprouted Brown Rice Crisps but Erewhon is great too. I can usually find both at my local grocery store but if you can’t, they’re always available online.

Can I use Regular-Sized Marshmallows Instead of Mini?

If you sub them ounce for ounce, then yes. Just add all the marshmallows at once instead of reserving a cup to add towards the end. I prefer to use mini marshmallows because I like to stir an extra cup in at the end so they’re not entirely melted.

There’s nothing like still having gooey bits of marshmallow in your Gluten Free Rice Krispie Treats! If you use the bigger marshmallows, you’ll miss out on that little bit of extra goo unless you add your cereal before they’re completely melted.

Key Ingredients in Gluten Free Rice Krispies Treats

Rice Krispies Treats are made with a few basic ingredients:

  • butter
  • mini marshmallows
  • gluten free crispy rice cereal (or Kellogg’s Rice Krispies if you don’t need gluten free)
  • vanilla extract
  • melted white chocolate and semi-sweet chocolate for dipping and drizzling

Equipment Needed

  • 1 large pot
  • wooden or silicone spoon
  • spatula
  • 9×9 inch pan
  • parchment paper
  • microwave safe bowls

How to Make Dipped Rice Krispie Treats

Step 1. Make your Rice Krispies Treats

Step 2. Let them cool completely, then slice into 16 squares.

Step 3. Melt the white chocolate.

Step 4. Dip each treat half way in the chocolate.

Step 5. Melt your semi-sweet or dark chocolate.

Step 6. Drizzle the melted chocolate over the Rice Krispies Treats

Step 7. Eat! Then store in an air-tight container.


Tips for Making Chocolate Dipped Rice Krispie Treats

  • Make sure your marshmallows aren’t old. Buy a new bag and make sure the bag has a lot of air in it and the marshmallows move freely around. Those are the fresher ones that haven’t been sitting on the shelf for ages.
  • Get chocolate that’s meant for melting or melts well. 
  • Make sure your cereal isn’t stale before you use it. I’ve made that mistake before 🙄
  • A little bit of water on your hands or spatula will make it easier to press your Rice Krispies Treats into the pan and won’t make them soggy.

How to Store Rice Krispie Treats

Rice Krispie Treats can be stored at room temperature in an air-tight container for several days. They can also be frozen in a single layer in a freezer bag for longer storage.

Chocolate Dipped Rice Krispies Treats

Ingredients

  • 4 Tablespoons salted butter
  • 6 cups mini marshmallows divided
  • 1 teaspoon pure vanilla extract
  • 6 cups gluten free crispy rice cereal
  • 12 oz. white chocolate or vanilla almond bark
  • 2 oz. semi-sweet or dark chocolate optional

Instructions

  • Line a 9x9 inch pan with aluminum foil and spray with non-stick spray (I use Spectrum Coconut Spray Oil).
  • In a medium pot, melt the butter over medium-low heat. When the butter is melted, reduce the heat to low and add 5 cups of the mini marshmallows. Stir frequently until the marshmallow are melted.
  • Remove from the heat and stir in the vanilla extract and the remaining 1 cup of marshmallows. Stir to melt the marshmallows a bit (chunks of marshmallow are ok) then stir in the gluten free crispy rice cereal.
  • When all of the cereal is coated with the marshmallow, transfer to the prepared pan. Let it sit in the pan to cool for a minute or two then use a spatula (dipped in a little water) or your hands to press into the pan.
  • Cool completely, about 30 minutes, then cut into 16-20 squares.
  • Melt the white chocolate according to package directions and line a sheet pan with wax paper.
  • Dip a Rice Krispie Treat half way in the melted white chocolate then place on the wax paper to harden. Repeat for all the Rice Krispies Treats.
  • Melt the semi-sweet (or dark) chocolate according to the package directions. Drizzle over the Rice Krispies Treats.
  • These can be eaten immediately or let the chocolate harden completely before storing.

  1.  Store leftovers in an air-tight container up to 5 days.
  2. These Chocolate Dipped Rice Krispies Treats can also be frozen for longer storage. Defrost at room temperature before serving.
