Crock Pot Beef Fajitas

A few days ago I posted a recipe for a homemade fajita seasoning mix, but what good is a fajita seasoning if you’re not making fajitas?! And these aren’t just any fajitas, these are crock pot beef fajitas – so super easy and so, so delicious! They are a family pleasing meal, for sure.

As the weather is getting warmer I’m feeling like I want to spend less and less time standing in front of a hot stove cooking away. I want to be outside enjoying this beautiful weather! Our grill is a little out of commission right now because we’re waiting for some new fire tamers to come in. So that means cooking inside. Boo.

Crock pot to the rescue!

I seriously love good crock pot recipes. I’m suuuuper picky about them though (ie: chicken recipes with cream of something soup that all taste the same and are all one bland boring color – no thank you). Speaking of chicken, try this recipe for Crock Pot Teriyaki Chicken!

I prefer my meals with lots of color and the crock pot is no exception. Good thing these crock pot beef fajitas measured up!

The peppers lend so much color and flavor to the fajitas. I used red pepper but you can use green pepper too. I was going to use both green and red but somehow my green bell pepper went missing. I’m pretty sure a certain toddler I know ran off with it when I was unloading the groceries. We’re bound to find it when it starts rotting and smelling 🙁

Either that or I just forgot to buy it. Anything is possible. Mommy brain I tell ya, it’s awful.

These crockpot beef fajitas are going to be making an appearance on our menu often. They’re so tasty, so easy, and so versatile. They’d be great for a weeknight dinner, doubled (tripled, etc.) and served to a crowd for a party or prepped and frozen for whenever you need.

Serve these up with your favorite fajita toppings. We topped ours with cheese, guacamole and salsa. Enjoy!

Ingredients

  • 1 1-1.5 lb London Broil Steak
  • 4 Tbsp fajita seasoning
  • 1 onion thinly sliced
  • 1 red bell pepper thinly sliced
  • 1/2 C water

Instructions

  • Place steak in the crock pot and sprinkle with the fajita seasoning.
  • Add onion, pepper and water. Cook on low for 6 hours.
  • Serve beef sliced or shredded. Top fajitas with cheddar, guacamole and salsa or your other favorite fajita toppings.

Notes

Stir peppers/onions twice during the cooking process and check water level to prevent drying out. Add a little water if necessary. When following a gluten-free diet, please be sure to use a gluten-free fajita seasoning mix such as [my homemade version.
